Nutella Muffins


Makes 12 muffins.

Ingredients
100ml olive oil
3/4 cup (150g) light brown sugar
2 eggs
1/2 cup (140g) Nutella
1 3/4 cups (230g) all purpose flour
1 tsp baking powder
3/4 tsp baking soda
180ml whole milk
2/3 cup (150g) bittersweet chocolate chopped or chocolate chips/chunks

Method
Preheat the oven at 350ºF (180ºC). Position rack in the middle of the oven. Put the paper liners in the muffin pan.

In a large bowl, sift the flour, baking powder and baking soda. Mixing well until incorporated, set aside.

In another bowl whisk the oil, sugar and Nutella. Add eggs, one at a time until combined. Add the flour mixture in 2 additions, alternating with the milk, and beat until combined with a rubber spatula. Please, do not over mix in order to have good results.

Finally add chocolate chopped. Reserve some of them for topping. 

When all the ingredients are combined, use a medium size scoop spoon to put the dough into the muffin pan, the muffin cup will be full. Put a few chocolate chopped on top.

Bake for about 22 to 25 minutes or until a toothpick insert on the muffins comes out clean.
Let cool for about 5 minutes in a wire rack before removing from the pan.

If you want you can topping your muffins with Nutella.
