Lemon poppy seed doughnuts


Makes 6 doughnuts.

Ingredients
1 cup (130g) all-purpose flour, sifted
1/4 teaspoon (2g) baking soda
3/4 teaspoon (6g) baking powder
1/2 teaspoon (3g) salt
1/3 cup light brown sugar
2 teaspoon poppy seed
1/2 lemon zester and juice
1 teaspoon (5ml) pure vanilla extract
1 large egg1/2 cup (120ml) plaint yogurt
2 tablespoon (30ml) olive oil.

Method
Preheat the oven at 375ºF (190ºC). Position rack in the middle of the oven. Grease donuts pan with nonstick baking spray.

In a medium bowl stir in sifted flour, baking powder, baking soda, salt and sugar. Whisk together until combine.



Add poppy seed and lemon zest and whisk again until everything is combined. Set aside.

In a another bowl whisk the egg, the olive oil, the plaint yogurt, and vanilla bean paste.

Put wet ingredients into solid ingredients, stir with a rubber spatula, until everything are combined, but it is really important not to overmix the batter in order to have good results.

When all the ingredients are combined, use a spoon to put the dough into the doughnuts pan, the doughnut cup will be full.

Put in the middle of the oven and bake about 12-15 minutes or until a toothpick insert on the doughnut comes out clean.
Let cool for about 5 minutes in a wire rack. Finally you can decorate your doughnuts with some icing sugar on top.
