Oreo Brownies



Makes 9 brownies.


Ingredients
1 stick (113g) unsalted butter, cut into peaces
1 + 1/4 cups (200g) dark chocolate chopped
2/3 cup (100g) raw cane sugar
1/3 cup (65g) light brown sugar
3 large eggs
1 teaspoon (5ml) vanilla bean paste
A pinch of salt
3/4 cups (95g) all purpose flour
18 oreos

Directions
Preheat oven to 350 F (180ÂșC) and place the rack in the center of the
oven. Butter an 8 inch square pan, and line the bottom of the pan with
parchment paper.

Melt the chocolate and butter in a bowl placed over a pan of simmering water. Stirring occasionally until smooth, and then remove from heat. Set aside.


In a large bowl put the eggs and sugars and whisk for 2 or 3 minutes until pale and fluffly. 

Add the vanilla bean paste and whisk until incorporate. 

Add the flour and salt, whisk until combined. 

Finally, meanwhile you are whisking the dough add slowly the melted chocolate, continue whisking until all the ingredients are combined.


Pour half batter into the pan, smooth with a rubber spatula and put half of the oreo on top. 

Pour the remaining batter into the pan, and smooth with the rubber spatula and put the remaining oreo coarsely chopped on top. 

Bake for around 28-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs. I recommend you not to over bake. 
Let cool on a wire rack.
