Pistachio, Lime and Cardamom Muffins

Last week I was looking throw on the Jamie Oliver website, and I got the Cake Book by Cupcake Jemma. This book is so pretty, there are many recipes about cupcakes and cakes and I could not resist to adapted her recipe of Pistachio, Lime and Cardamom Cake into a muffins. Baking muffins is a good way to get a delicious little cake in a short of time. 

INGREDIENTS
1 cup (120g) all purpose flour
2 teaspoon (8g) baking powder

1/4 teaspoon cardamom
1/2 cup + 1 tablespoon (110g) light brown sugar
2 large egg, at room temperature

1/3 cup (80ml) olive oil
1/3 cup (80g) Greek or plain yogurt
2/3 cup (100g) pistachio finely chopped, plus extra for topping


Lime syrup (optional)
3 tablespoons water
zest from 1 lime
lemon from 1 lime
1/3 granulated sugar

DIRECTIONS

Preheat the oven at 350ºF (180ºC). Position rack in the middle of the oven and put the paper liners in the muffin pan.


In a separate bowl sift together the flour and baking powder. Stir in the sugar until incorporated. Set aside.



In another bowl whisk the olive oil, greek or plain yogurt and eggs until combined.



Put the flour mixture into the egg mixture and whisk just until combined. Finally fold he pistachio finely chopped  into the batter, until just incorporated. Do not over mix.


When all the ingredients are combined, use a medium size scoop spoon to put the dough into the muffin pan, the muffin cup will be full.

Bake for around 20-22 minute until golden brown or until a toothpick insert on the muffins comes out clean.


Let the muffins to cool on a wire rack almost 10 minutes before removing from the pan.

Making the Lime syrup 
Meanwhile the muffins are baking, make the lime syrup. Place the sugar, water, andlime juice in a small pan over a low heat. Stirring continuously and cook until the sugar is disolved, for about 4 minutes.

Turn the heat up to a medium and bring to the boil. Add the lime zest and cook for 5 minutes or until the syrup is reduced. Retire from the heat and let it cool completely.

Decorating the muffins
Use a toothpick to poke small holes all over the top of the muffins, then pour over the lime syrup. Finally chop and sprinkle the pistachios o top.
