Malteser Brownies

Amazing brownies for chocolate lovers

Makes 9 brownie squares


INGREDIENTS

To make the brownies:

1 cup (200g) dark chocolate (54% cocoa), broken into pieces
1/2 cup (115gr) unsalted butter
3/4 cup (175g) brown sugar
1 teaspoon (5ml) pure vanilla paste
3 large eggs
3/4 cup (95g) all-purpose flour
1/4 teaspoon (2g) salt
1/4 teaspoon (4g) baking powder.


DIRECTIONS


Preheat oven to 350 F (180ÂșC) and place the rack in the center of the oven. Butter an 8 inch square pan, and line the bottom of the pan with parchment paper.



Melt the chocolate and butter in a large stainless steel bowl placed over a pan of simmering water. Stirring occasionally until smooth, and then remove from heat. Set aside


In a medium bowl whisk the brown sugar, vanilla and eggs until smooth.

Next, add the melted chocolate into the wet ingredients and whisk until combined.

Finally, stir in the flour, baking powder and salt. 


Pour batter into the pan and bake for around 25 minutes, or until a toothpick inserted in the center comes out with moist crumbs. In order to have good result, I recommend you not to over bake. 


Meanwhile the brownies are baking in the oven, you can make the chocolate ganache.

Chocolate Ganache

INGREDIENTS

4 ounces (120g) bittersweet chocolate, broken into pieces
1/2 cup heavy cream
2 tablespoon unsalted butter cooled, cut into pieces

A handful chocolate milk ball (Maltesser)

Chocolate flakes (optional)
Sea salt flakes




Heat the heavy cream until boil. Pour the boiled heavy cream over the chocolate chopped and whisk until combined.


Finally add the butter into the chocolate mixture until incorporated. Set aside.


Get the brownie from the oven and place on a rack and let to cool for about 10 minutes before decorate. 

DECORATION

Remove the brownie from the pan. Spread the chocolate ganache over the brownie and smooth with a spoon. Put some milk chocolate balls cut into pieces, chocolate and sea salt flakes on top.
