Double chocolate chips cookies.


INGREDIENTS

1/2 cup (113g) unsalted butter, at room temperature
1 cup light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup dark chocolate chips 
Optional
1/4 cup walnuts coarsely chopped for topping

DIRECTIONS


Preheat the oven at 350ºF (175ºC).

Line two baking sheet with parchment paper or a Silpat nonstick baking mat, set aside.

In a medium bowl wishk together flour, cocoa powder, baking soda, baking powder and salt, set aside.

Put the butter and sugar in a large bowl and mix with a wooden spoon until the mixture is very smooth (around 3-4 minutes).
Stir in egg and vanilla extract.

Add the dry ingredients into batter mixture. Mix until all the ingredients are combined. 

Finally stir in chocolate chips.

When all the ingredients are combined, use a small size ice cream scoop spoon (40mm) to put dough balls on the baking sheet. Leave 2'' (5cm) between the cookies. Sprinkle top with walnuts.

Bake for around 11-12 minutes or until cookies are just done! It is very important do not over cook the cookies.

Let cool for 5 minutes on a wire rack.
