Ingredients
For the Brownies
150g dark chocolate, chopped
1/2 cup unsalted butter, cut into pieces
1 cup brown sugar
1 tsp pure vanilla extract
3 L eggs
3/4 cup flour
1/4 tsp salt
Ghosts
1 egg white at room temp
1/4 cup white sugar
Pinch salt
Chocolate ganache
200g dark chocolate, cut into pieces
200ml heavy cream
Graves
7 biscuits
25g white chocolate, cut into small pieces
Chocolate ganache
6 oreos without cream, finely chopped
Directions
To make the Ghosts
Preheat oven to 230F (110C). Whip the egg white and the pinch of salt in a bowl until stiff peaks form. Whisk in sugar and keep whisking for a couple of mins until the mixture is thick and resembles shaving foam. Put mixture into piping bag, cut a 1.5cm hole. Line a baking sheet with parchment paper. Squeeze a small circle of whipped egg white, pulling upwards to make a ghost shape. You should get about 15 ghosts. Bake for 1 1/2 hours until crisp.
To make the Brownies
Preheat oven to 350F (180ÂșC). Butter an 8 inch square pan, and line the bottom of the pan with parchment paper.
Melt chocolate and butter in stainless steel bowl placed over a saucepan of simmering water. Remove from heat and stir in sugar. Whisk in vanilla and eggs, one at a time. Stir in flour and salt.
Pour batter into the pan and bake for 25-30min, or until a toothpick inserted in the center comes out with a little batter to it.
Brownie Decoration
Heat cream in saucepan until just boiling. Place dark chocolate in bowl and pour over hot cream. Stir until chocolate melts. Let ganache cool for 10min. Paint a layer of chocolate over biscuits with a brush, set aside to cool. Paint ghosts' eyes with chocolate ganache with toothpick.
Pour the rest of chocolate ganache over brownie and smooth with a knife. Put chopped oreos over top of the brownie.
Place white chocolate in bowl, set over a pan of simmering water until melted, spoon into a piping bag. Wait for 10 minutes, cut a tiny hole. Pipe out suitable words and leave for 30 minutes to set. Push biscuit gravestones into brownie and arrange ghosts around.
